I promise this is the last one that is out of sync!
Since this box had three meals I decided it would be best if I broke it down into three different blog posts for each recipe. Today we are focusing on the Sweet Potato Pita Wraps with Golden Raisins and Shaved Vegetable Salad

Also, this is a big box. It was a wee bit heavy even for me (the Hulk) to carry
Our recipe. We received the Hello Fresh Classic box. This was the only meal that didn't include meat. The sweet potatoes are the "meat" here. When I was a vegetarian sweet potatoes were one of the only foods that would give you the same sort of "full" feeling that meat does. Sweet potatoes are almost like a meat to me in that I regard them as a heartier, food than the vegetable that they are.
Everything that we received to create this dish. I was excited about the hummus but wasn't sure how much my husband would enjoy this because he isn't really a fan of sweet potatoes.
2 Cloves of Garlic
So let's get it started
Our first step is to peel and dice the sweet potato. I was stoked because I could put all the peels and throwaways from this recipe into my compost pile!
Toss with olive oil and salt and pepper
Put on a baking sheet and bake at 400 degrees for about 20 minutes
(Or until carmelized and soft)
Now we get to prepping
First, we halve peel and finely chop our red onion. I busted out my Pampered Chef Slap Chop because my chopping could use some work.
There it is!
Then the tomatoes
I adore the colors in this recipe!
And so forth and so on we quarter, halve, mince, and chop until almost all of our ingredients are prepped
Now we prep the cucumber and carrots since they are being shaved.
We didn't use the insides of the carrot or the cucumber since we were shaving off the outer edges with a vegetable peeler. So, this was definitely a compost pile score!
(And yes, that's a Ronald McDonald plate - don't judge me)
So we put the onions in a pan on medium with olive oil and toss for about 5 minutes. Then add the garlic and cumin for about 30 seconds (until it gets fragrant). Next add in the raisins and salt and pepper.
Here is what that little concoction looks like. You might ask yourself why is it in a bowl? She didn't say put it in a bowl. DON'T! I do this because I get scared I'm going to burn things while I'm photographing and since this is a one man show... I've developed my own method of prevention. I just quickly put it in a metal mixing bowl and presto! I've snapped you a pic!
Once the onion mixture is tender add in the sweet potatoes and cook for two to three minutes. You can also add in the almonds now.
Now we assemble our salad. Toss together the cucumber, tomatoes, carrot, lemon zest, mint and a tablespoon of olive oil, a squeeze of lemon and a pinch of salt and pepper.
Toss to combine
Now we assemble our pitas (Is assembling not the best part?) I love knowing I'm almost at the finish line!
Halve pitas, spread with hummus, and then fill with sweet potato mixture
Serve the shaved vegetable salad to the side and enjoy!
Final Thoughts on This Dish
I am in love with the Hello Fresh subscription. These recipes are not only original they are delicious as well. Even my husband who doesn't like sweet potatoes was bowled over by this one. There was a lot of prep work so if you have kids find them something to do before hand. This was definitely worth the work that we put into it though, Everything was fresh and healthy and what's most important, it was filling!
