Sunday Soup: Kale Sausage

For today’s soup Mr. I’m not a tree contributed with his awesome kitchen skills and whipped you guys up some Kale Sausage Soup. Since he declined a picture I took the liberty of introducing him to you guys with a picture I already had….

I bet he wishes now he’d have just let me take one.


Anyway… back to the kale sausage whatchamacallit

Here’s what you’ll need:

  • 1 lb. of any sausage of your choice – most recipes call for polish sausage but I DO NOT eat that so I use Italian
  • 3 medium sized potatoes
  • 2 medium onions (we use the purple because they are the BEST)
  • A couple TBSP of olive oil
  • a bunch of kale
  • garlic cloves (depends on how much you like) we used about three cloves
  • salt and pepper to taste
  • bay leaves
  • 1 can diced tomatoes (undrained)
  • 1 can chick peas
  • Chicken stock (or veg) (Recipe below)

Chicken Stock Recipe:You’ll need:

  • Bones of four chicken thighs
  • 2 quarts of water
  • 2 carrots
  • 2 celery stalks
  • one onion
  • salt and pepper to taste

Instructions:

First you will want to debone chicken thighs (this is why my husband is in charge of this, I find this kind of stuff really gross)
Add the bones to water
Now, chop your veggies add to your water
Bring to a boil reduce heat to simmer for about three hours
Salt and pepper to taste
Strain and VOILA!

To make your soup you will need to:

  • Add chicken stock to slow cooker
  • Chop up potato into bite sized pieces
  • Add potatoes to soup
  • Add tomatoes and chick peas 
  • Add your chopped onion
  • Add kale (see special note)
  • Once broth had visibly reduced Mr. I’mnotatree added raw sausage
  • Let cook on high all day… basically as long as you want

Special Note:

There he is spilling soup on himself … it was hot. This happened because he didn’t take the kale off the stalks so it wasn’t quite done enough when he was eating it…. so do yourself a favor and take the kale off the stalks and cut it up before adding 
How do you feel about kale? I know it’s super healthy but it’s one of those things that I just can’t get into… particularly the smell… it gets to me.
