My first glimpse inside the package from Spice Breeze
Everything that came in my Spice Breeze package for the month. I love that the packet has a list of pantry staples for Asian cuisine, what a neat touch!
So what is all this stuff?

This month our spice kit will be taking us to Seychelles. The smallest African country
The first kit in our package for the month is a Seychellois Kit. Pwason Griye is grilled fish and is one of the most popular dishes on the island. This dish is grilled and served at the beach with a familiar dinner in mind.
There are two spice packets included for this recipe the first includes; tamarind garlic, ginger, black pepper, cinnamon, nutmeg and cloves. The second includes cardamom, cinnamon, cloves, cumin, thyme, coriander and white pepper.
The second packet tells us how to make Bulgogi a Korean BBQ. I have never made bulgogi and can’t wait to try this out!
There were two packets included for this recipe – the first includes Shitake Mushroom and black pepper and the second includes Korean chili pepper and salt.
The final packet in my Spice Breeze package for the month is Moussaka a Greek culinary dish. This casserole made with lamb, eggplant and bechamel is tricky so spice breeze merged it with something called Kleftiko which is a lamb dish baked in parchment paper. There is enough spice in our package to make two dishes! Our kit has only one seasoning packet which includes black pepper, thyme, cinnamon and bay leaves. I decided to make this dish for the month.
Okay so now what?
The first task is to soak your eggplant in a salt water bath. This takes out the bitterness. I also sliced it into 1/8 inch slices
Then I season my meat with salt.
Then in a bowl I mixed together oil, wine and half the Moussaka spices.
This is really pretty!
And while I did that I poured myself a glass!
Then I prepped the fresh ingredients. I sliced up potatoes, tomatoes, onions and garlic.
These are cooked in foil packets lined with parchment paper. There are two layers of parchment to one layer of foil. Now I assembled the eggplant, sirloin, vegetables and splayed the potatoes along the edge
You’ll then drizzle some of the mixture over this and repeat for the remaining foil packets. At that point you’ll bake at 400 for about an hour
To go along with our Moussaka packets we made a really simple fresh salad. For the dressing we mix together orange juice, olive oil, salt and pepper.
I forgot to aded that you sprinkle cheese over the top of our packet at the end. You can use whatever you like. This was the kids packet when I opened it. My husband and I opted for no cheese.
That’s what ours looked like.
And here it is plated! Yum!
